The small golden apricot is packed with antioxidants and other health-promoting compounds. This fruit-sweetened jam — with only four ingredients and no refined sugar — pairs nicely with cornbread, but it is also delicious when used any way you would normally use jam. Since it is not preserved with refined sugar like most commercially prepared jams and jellies, it is best to store it in small containers in your freezer. Then bring it out when you want a treat!

RECIPE INGREDIENTS
1 cup dried apricots
1 cup unsweetened pineapple juice 
1 cup pitted dates 
Apple juice, as needed

INSTRUCTIONS
Soak the apricots in pineapple juice overnight so they will be easier to blend. 

Place in a blender; add the dates and blend until smooth and creamy. Use as much apple juice as needed to run the blender while still keeping the jam nice and thick.
