2 pounds garbanzo beans (chickpeas), drained
1/4 cucumber, thinly sliced
1/4 cup red onion, chopped
3 cloves garlic, minced
1 cup cherry tomatoes, halved
3/4 cup parsley, chopped
1/4 cup olive oil
1 tablespoon lemon juice
salt and pepper to taste

In a large bowl, combine the cucumber, chickpeas, red onion, garlic, tomatoes, parsley, olive oil, lemon juice, and salt and pepper to taste. Chill for 2 hours before serving. Taste and adjust seasoning. Serve cold.
