A twist on an old favorite, using pineapple instead of tomato in salsa. In fact, “salsa” is just another word for sauce, and traditional Latin salsa condiments can use all manner of ingredients, from tomatoes and chili peppers to avocado, carrots and even chocolate. Choose a healthy-looking, ripe pineapple (an appetizing, sweet smell is the best test) or use canned — either way will provide a sweet lift to a delightful array of dishes or as a dip without adding processed sugar to your diet.

RECIPE INGREDIENTS:
1 lb. or 3 cups pineapple, diced
1 cup red bell pepper, diced
1 small red onion, diced
2 small jalapeño peppers, minced
2 tablespoons Italian parsley, chopped

INSTRUCTIONS:
Follow the prep technique next to each ingredient.
Combine all ingredients together, mix well and serve.
