Recipe Ingredients:
1 cup rolled oats
1 sweet apple, peeled and diced small (Fuji apples are especially good)
1 1/2 cups soy or almond milk
2 tablespoons pure maple syrup
1 teaspoon vanilla
1/4 teaspoon salt
1/3-1/2 cup chopped walnuts
Instructions:
Combine all ingredients except nuts in a one-quart baking dish.
Sprinkle nuts evenly over oatmeal mixture.
Bake at 350°F for 40-45 minutes or until set.
Serve warm with nondairy milk, a side of toast, and fresh fruit.
