8 oz. uncooked rotini pasta
2 cups broccoli florets
1/2 (16-oz.) container firm tofu, drained, cut into 1/2-inch cubes
1 (14-oz.) can artichoke hearts, drained and quartered
1 small red bell pepper, seeded and chopped
1 (8-oz.) bottle low-fat Italian dressing
1. Cook pasta al dente according to package directions; drain. Rinse with cold water; drain well.
2. In a large bowl combine pasta, broccoli, tofu, artichokes, bell pepper and dressing; toss to coat. Cover and chill at least 1 hour before serving.
