This fresh cucumber relish is a great side dish and a healthy replacement for pickles that contain many
additives. This relish makes a perfect addition to a summer picnic, potluck or barbecue. 

PREP INSTRUCTIONS:

6 1/4 cup servings
Prep Time: 20 minutes
Cook Time: None  
Total Time: 24 hours, if marinated 

RECIPE INGREDIENTS:  
1 1/2 cups unpeeled cucumbers, thinly sliced 
3/4 cup onion, thinly sliced 
1/4 cup green pepper, thinly sliced 
1 teaspoon dried dill weed 
1 teaspoon garlic, minced 
1/2 teaspoon salt 
1 1/2 teaspoons sweetener of choice 
1/3 cup cold water 
1/3 cup lemon juice 

INSTRUCTIONS:  
1. Layer vegetables, dill, and garlic in a glass container. 
2. Dissolve salt and sweetener in liquids. 
3. Pour liquid ingredients over the vegetables. 
4. Seal with a lid and marinate 24 hours.
